Field capacity is the amount of water a substrate can hold without extra water pooling, and generally just an ideal amount for a successful grow. If you squeeze your substrate lightly, no water should come out, and a hard squeeze should produce just a few drops of water.
Vermiculite can be added to a substrate that is over field capacity in the preparation process to bring it to the correct capacity.
Coco coir differs from brand to brand and batch to batch, but generally you can achieve good field capacity either by eye or by using specific weights.
